TokYou Sushi is the vision of Piotr Wojakowski, a passionate and fully qualified chef. Originally from Poland, Piotr has called Skibbereen home for over eighteen years. Combining his expertise in seafood with his dedication to Japanese culinary arts, he brings authentic sushi experiences to West Cork.
A Chef’s Journey
Piotr’s Journey
Piotr’s culinary path began in Poland, where he developed a love for seafood and cooking. After studying at a Gastronomy College and obtaining his chef qualification, he moved to Ireland in 2007. He honed his skills as a fishmonger at Field’s SuperValu for twelve years, deepening his knowledge of fish and seafood. In 2019, he pursued his dream of becoming a sushi chef and enrolled in the prestigious Tokyo Sushi Academy(TSA). His intensive training in Japan refined his craft and instilled in him the discipline and precision of traditional sushi-making.
The TokYou Story
The Birth of TokYou Sushi
Returning to Ireland in 2020, Piotr saw an opportunity to introduce authentic sushi to West Cork. The COVID-19 pandemic made dining out difficult, but it also increased demand for high-quality takeaway food. Piotr opened a small sushi kitchen, offering only deliveries, and quickly gained a loyal following. As demand grew, he expanded his offerings, supplying local retailers such as Centra, Londis, and SuperValu. Finally, in March 2024, he achieved his long-term goal and opened a restaurant. The local community embraced his venture, and TokYou Sushi continues to flourish, staying true to its roots—offering high-quality, artisan sushi. Piotr remains dedicated to his vision: “Keep it artisan, keep it West Cork—good food for good people.”

From a shared kitchen in Skibbereen’s New Bridge Park, Piotr handcrafts sushi with the freshest ingredients, delivering his creations across West Cork every afternoon. TokYou Sushi is proud to offer gluten-free, vegan, and vegetarian options alongside traditional sushi and seafood platters. Originally envisioned for events like weddings and parties, Piotr looks forward to expanding these services in the future as his business grows.
